Used to cook walleye up north all the time with the foil.....We never filleted them...just gut & scale them.
Put the onions and whatever suits your fancy in the cavity with a couple of ice cubes....wrap in foil and put right over the fire for about 1/2 hr or so
When you take them out. grab the head and lift it out....all the bones come with it....nothin left but the meat and it melts in your mouth....oh and don't forget to eat the cheeks
