Meat Treats

Post by Markus »

We've been snowed in and havent been able to make it to the cabin, but to help with the winter blues, we like to enjoy a few meals.

I saw this recipe the other day and decided to try it with some deer burger. It's a pretty simple prep. Just season the burger and after laying out some bacon, flatten the burger on to it. Then add a strip of cheese and roll it into a log. Pop it in the oven at 360F.

After 25 mins, start basting it with bbq sauce every 5 mins for another 20 minutes. Then take it out and roll t i some crushed corn chips.

Slice it thin and serve it with a dipping sauce. We used a sweet chili dipping sauce and it was fantastic.

For a few future meals, I picked up a tub at the dollar store to soak a few roasts in a salt brine. I used 2 deer roasts and 2 bear roasts. I'll let this soak for 10-14 days and we'll be ready to enjoy an awesome salt meat cabage stew....or as the newfies call it, jigs dinner.

The salted meat will make a great piece of meat to give to a friend as well.

You'll enjoy it for sure.

I just made it all on a sheet of wax paper so I could roll it when ready.

I'd add a few chopped onions to the burger next time I make it.

Here's a mouth watering meat treat my camp partner Tim whipped up. He finished up a few corned bear roasts in the smoker and after enjoying a dinner of it, he used the left overs the net morning for breakfast.

My daughter and I snow shoed into the camp today and she brought along a cut from her deer and few veggies for a chunky stirfry in the cast iron.

Looking good Markus. Love my cast iron pans, but still have a hard time getting wifey away from those teflon ones. Good thing she's not a canary, but she sure can sing.

You should post a pic of that table and maybe a few more of your camp for folks here to see. I wouldn't know which page to start looking for it lol.

Cheers

I'm glad ya like the table Smitty. My buddy is really good with the wood burning and has made a few nice things around the camp.

Tonights meat treat was a traditional dish and one of my favorites. We've been wanting to try a meal from one of the roasts we had soaking in the slat brine and tonight we slammed back a delicious meal of salted deer roast and sauerkraut.

The meat turned out perfect and we'll be slating a lot more cuts next year for sure.

I just tried the meat log using up some old ground venison in the freezer. It was awesome. My variations include making a weave pattern in the bacon. (it really helped it hold together) and I put some whole green onions down the middle. One mistake was not sealing the ends so most of the cheese melted out.
I will try it again in the spring if I can get some fresh fiddleheads to put in the middle.;-)
