SMOKING FISH

New to using a smoker.Does a person have to use chips or could you use twigs and small branches from an apple tree(just happen to cut an apple tree down) Won't need to buy chips for along time if they work. :lol:

I've been using branches from an apple tree that went through a chipper. Works great

i use the store bought chips. can. tire or your local sport shop. if not them wally mart.. 4 or 5 bucks willl probably give you a years supply with many flavor choices

The only problem with those store bought chips is that you don't know what goes into them. A lot of them actually put artifical flavourings in there mix to make it taste like maple, chicory or apple. At work I do all my smoking with branhes of maple and it works beatifully.

I've been smokin' for a little time now ... and my advice is if your going to use apple wood from your own tree make sure that the bark is removed. Bark on chips or on twigs will give your meat/fish a bitter taste. Oh .. and forget about soaking chips in water ... try doing a light soak in apple juice.

I tried smoking fish once. I found I couldn't keep them lit and they were realy hard to hold between your fingers when you were standing outside a restaurant trying to look cool with the other smokers. :roll:
