Has any body made goose jerky and can it be done in the oven

I just made up 10 pounds the other week and it came out great in the oven. here is what I did.

1. cut breast meat into strips about 1/4" thick
2. make marinade. a few good shakes of Worcester sauce, couple of squirts of liquid smoke, teriyaki sauce, little bit of sugar, Montreal Steak powder, bit of salt (helps preserve)
3. marinade 24-36 hours in glass bowl in the fridge, stir every so often
4. cover bottom of oven with heavy gauge aluminum foil. makes an awful mess if you don't.
5. spray racks with Pam and lay out strips with room for air between each set temp at 150. you might have to prop door for more air circulation
6. mine took about 6 hours to dry

This was my first year goose hunting and I loved it. I had to hide some of my jerky cause I’ll eat it all before the lake freezes over, lol.
I'm keeping this recipe, it sounds tasty. 8) 8) 8)

funny this thread was just rejuvenated as I did up a batch last night and today. I followed this recipe and the outcome was DELICIOUS!

I know. Everyone wants some. I've almost got my brother in law and father in law into joing me next year. The hunt is tons of fun and the meat is good. Win, win I say.
