it's been a few years since I lived in Northern BC and we used to fly fish for the Brookies, thanks for the pix they brought back great memories and that looks like a yummy shore lunch!

I've definitely never seen trout cooked with the heads still on. That's new to me.

Growing up as kids we caught mostly little 8 inch specks in creeks. We always fried them in butter with heads on. I guess they looked too small with the heads off :shock:

But even when I bake a 6 pound Rainbow, it's always with a rice stuffing and the head on.

I guess it just looks better cooking as a whole fish to me. I don't eat the heads, but I'm sure they add flavor for the deglazing of the pan and making the sauce, when fried in butter.
