Never gone for carp here but in England I used pretty much exclusively bread on light float tackle.

A few kernels of canned corn has worked well for me. Just let the corn rest on the bottom for the carp to gobble. A bite alarm is ideal for this method, but just a float or bell hanging between the first and second eye does the job. You'll generally have best luck above any dams.
