Sturgeon opens in Quebec zone 10 today
I know of a farmer, waterfowl guide, biologist, etc. who lives near Rigaud, QC, but just inside the ON border. He also has a commercial license to fish sturgeon and other species from the St-Lawrence River near Chateauguay, QC.
What he does with his catch is smoke the fish and sells it to clients.
Having taken a waterfowl calling course with this guy at his place of residence, I was able to sample some of the smoked fish, and it was delicious.
Eaten any other way, I could not comment.

hi legrand do have the list here off all comercial fisherman in qc.
here in are region there is 3 permit deliverd...2 off them are in the same familly and one is own by an ontario resident but have a pq comercial license.
the 2 frome q.c are the shriers..the same guy that rent ice fishing shak in bay clement on ice... great peole by the way.
but again i dont think we have anuagh sturgeons to feed comercial fisherman ..even if they have kotas. at least for the ottawa river.
i do think its a great tread and yes ELI did braught some great info in this.
but not mutch people fish for them actualy most off them are caught by accident people fishing other species...realy how mutch people do target them realy target them...not mutch.

i personally know the guy that lives in Ontario and has a PQ commercial license. he doesn't harvest many anymore because the numbers are dwindling.
the sturgeon are an awesome fight. the small ones release with little effect but i've noticed that when you release a 4 footer they take a long time to swim away. the fight takes alot out of them. i once had a 55 incher take 2 hours to re-coup enough to swim away. now that they are listed as at risk or endangered, i trust the experts and refrain from targeting them.

Last year, I caught my first strugeon, as an accidental catch at Walleye opener, again in zone 10 (QC). Not knowing a lot about the species, I turned to F-H to find out if they could be fished locally, for table fare. You're right, alot of the same arguments came up, and guess what? It actually DISSUADED me from fishing/harvesting (with my QC non-resident license) an O-River sturgeon.
I then spent a good chunk of the summer/fall practising technique and rigs for sturgeon, so that I could be ready this year.
MY Sturgeon-opener thread was one of personal interest. Someone started a Bass-opener thread (which went a little off course, and I participated...), so I wanted to talk about something I was interested in. I like that it turned to a debate, but most people who are debating, give me facts about the Ottawa River, not the Gatineau River.
Back to your original comment: I am not, by any means, trolling.

We went out, my cousin (16-y-old, new to fishing as of last year. Has only ever fished for specs in a creek), and were on the water by 7:30.
8:00, my cousin hooks into a 4lb sturgeon. It's not the monster that I was expecting to catch, but not a bad fish, or a bad fight, for his first sturgeon. I ask him what he wants to do with it, and he answers: "I'd like to keep it to taste sturgeon, and I'd rather keep a small one, since it hasn't reached reproductive age." No joke. I'm amazed that this kid has done his research, before targetting the species for the first time. It was my first time fishing with him, and now I know that I'll take him out with me again.
Then, nothing. Nothing for 5 hours! We travelled 12 kilometers from our first spot, trying here an there. At 1pm, I say: " well, I've had enough of drowning worms, and I've got a long drive. We'd best bring ou lines in". His line is stuck, so he thinks. As he tries to reel in, it takes off. Little buggar has another one on. Turns out it's a 4lb-er as well. Released to swim some more.
So we caught 2, and he was gracious enough to give me a piece of the one he kept, so we can both taste.
Not a bad day, for blue-bird skies.

here is a link to the COSEWIC site and a status report on lake sturgeon populations across Canada. The GL-Upper St Lawrence population is assessed as threatened and hasn't recovered from earlier over-fishing (mostly commercial) and present habitat issues - dams, changes to river habitat, etc. though it is legal to keep one, I wouldn't personally, but if you are gong to harvest one it makes sense to keep a small one rather than a large spawner, a habit that would benefit most species in my opinion.
