First, NICE FISH!
Second, I see some are talking about smoking their fish... I have two that I'd like to try that way (15-17inch splake). Anyone have any advise? (kind of a hijack i guess...) I have a friend who owns a smoker... but neither of us have any concrete idea on how best to prepare fish...

There is still a fair bit of sugar in the brine I use. Maybe Luke could do you up a brine with less sugar. (I would replace the sugar with more soya sauce and maybe try ground ginger or something to add some flavour...)
