Are there regulations on crawfish fishing?
I was thinking of putting out some traps and having a crawfish boil.

I've only seen regs regarding trapping for bait. Then again if you're going to boil those big (invasive) Rusty Clawed Crayfish, I'm sure no one would object.

Jason, they're easy to trap using a minnow funnel trap. Put any meat,i.e. hot dog, leftover piece of steak, in the trap and place in a likely locale and wait.
As for not eating them as long as the water is clean why not. Search the web for crawdad recipies and you'll get thousands of hits. Cajun cooking has been using crayfish forever! Not sure about limits but if you've eaten them I'd like to see the MNR try to take a count.
