They're "flinging" more than flipping. They would pitch their jigs almost vertically about 20-30 feet in the air and onto the mat to get good penetration.
There should be some good tips there if the episode is available online.

Punching
I've done my fair share what seems to work best for me is texa's rigged plastics with a small profile most of the time these fish are hitting it on the down fall. I use a 7'6 tommy biffle signitures series flipping stick with a quantum energy 7:0.1 gear ratio reel. 50-65lb braid.
weight
tru-tungsten i start at 3/4 and work my way up to 1 1/2 these weights are 1/3 the size of regular lead weights and transmit everything better.
Hook
Trokar 4/0 punch hook, i found this hook to be one of the only hooks i don't straighten and it holds its point no matter what.

For me I find flipping a #2 granular A 20lb cinder block with a 7:2:0 ratio rope for easy retrieve works best. Add on a 3oz sinker stone in rock grey aprox 3ft up will help allow the weed mat to follow down with the lure adding extra cover to your line for less spook. Follow this with a fine finesse twitch to allow real life action on the block. Once you feel bottom hang on cause those bad boys slam this presentation....*******NOTE OF CAUTION****** This set up does allow for easy snags so if flipping near a fallen tree make sure you also have a #3 50lb auto close bolt cutters.
Good flippin
Like I said before I do not follow all these flashy names and ratio's just like to fish!

Fishing isn't a matter of life and death....
It's much more important.
